Im making my 2 week menu. Here is my recipe to share. Its sooo good!
Please feel free to share one also! I need something new to cook. :) tia

Linguine with Shrimp, Roasted Tomatoes and Spinach
serves 4 time 30min

Preheat ove to 450degrees. In a baking dish, toss together 1/2 pin halved cherry tomatoes, 1 tsp chpped garlic, 1/4 cup olive oil and salt and pepper to taste. Roast for 10 min. Sprinkle w/ 1/4 cut Italian bread crumbs and roast for another 5min. set aside
Meanwhile, Boil 1lb linguine accroding to package directions. Heat a large saute pan over med heat. Add 2 tbsp oil, 2 tbsp butter, and 1 tsp chopped garlic and cook for 1 min. Add 1lb large peeled and devined shrimp;season w/ salt and pepper to taste. Saute until the shrimp are pink and cooked through, 3 to 4min. Add 1/2 cup chicken broth, and let the liquid cook for 1-2min. Add the drained pasta, roasted tomatoes and 2 cups baby spinach, cook a few min. till the spinach shrivels up. Toss well and serve w/ some fresh french bread w/ butter or side salad! SOOO YUM!!

I'll do my banana bread! :) It's AMAZING and it's been passed down generations!

Mom's Banana Bread
2.5c flour
2c sugar
1c butter flavored Crisco
1tsp baking soda
1tsp salt
6 VERY brown bananas
4 eggs
1c mini chocolate chips (Optional-but it's SO good this way)

Pre-heat oven to 350'
Butter and flour two bread pans.
(Makes two loaves!)
Mix all ingredients together, no sifting necessary.
Pour in pan, bake.
I don't like to say a set time, but it's usually about 45minutes to an hour, it depends on your oven! Just make sure a toothpick inserted comes out clean!

cede, can real butter be used instead? I only purchase real butter and olive oil and won't use any other sort of "fats."

Layered Enchilada Bake. It's my new favorite dish :)

Heat oven to 400 degrees

Brown 1lb of lean ground beef with one large onion, chopped. Drain and stir in 2 cups salsa, 1 can (15oz) black beans (rinsed), 1/4 cup Kraft Zesty italian dressing and 2 Tbsp Taco seasoning.

Arrange 3 tortillas in a single layer on bottom of 13x9 inch baking dish. Cover with half of meat mixture, 1/2 cup sour cream, and 4oz mexican style cheese. Repeat layers and cover.

Bake 40 minutes or until casserole is heated through and cheese is melted, uncover after 30 minutes.

**I omit the black beans and put in an entire packet of taco seasoning.

I have a really good recipe for chicken parmesan. I grew up in a true Italian household, I had to learn everything.. I even have a recipe for 27 pound lasagna.. can you believe that!?

Best Pumpkin Chocolate Chip cookies ever!

INGREDIENTS:
1 15 ounce can of pumpkin
1 cup granulated sugar
1/2 cup vegetable oil
1 egg
2 cups all purpose flour
2 teaspoons baking powder
1 teaspoon of pumpkin pie spice
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
1 10 ounce bag of chocolate chips
1/2 cup chopped walnuts (optional)

DIRECTIONS:
Preheat oven to 350 degrees. Spray cookie sheet with non-stick cooking spray (or just use some parchment paper)

Combine the pumpkin, sugar, vegetable oil, milk and vanilla
In a separate bowl, stir together flour, baking powder, pumpkin pie spice, salt and baking soda
Add flour mixture to pumpkin mixture and mix well

Add chocolate chips and nuts if desired

Drop by spoonful onto cookie sheet and bake for approximately 10-13 minutes or until lightly brown and firm.

Dust with powder sugar if desired.
These cookies are amazing both hot and cold out of the refrigerator!

Apple Braised Pork Roast

Ingredients

1 teaspoon dried thyme
1 teaspoon rubbed sage
1 teaspoon pepper
1 (3 pound) boneless pork loin roast
1 tablespoon canola oil
1 cup chopped onion
3 garlic cloves, minced
1 large apple - peeled, cored and chopped
1/2 cup frozen unsweetened apple juice concentrate, thawed
1/2 teaspoon salt


Directions

Combine the thyme, sage and pepper; rub over pork. In a Dutch oven, brown meat on all sides in oil; remove and keep warm. In the same pan, saute onion and garlic until tender. Add the apple, apple juice concentrate and salt; bring to a boil. Return meat to the pan. Cover and bake at 325 degrees F for 55-75 minutes or until a meat thermometer reads 160 degrees F, basting occasionally with juices.Remove to a serving platter and keep warm.
Pour cooking liquid into a measuring cup; skim off fat. Cool cooking liquid slightly; place in a blender or food processor. Cover and process until smooth. Serve with the roast.

my Favorite dips for snacks/sports season are these 2.


Chicken Buffalo Cheese Dip

INGREDIENTS:
16 oz. pkg. cream cheese, softened
1 Cup blue cheese or ranch salad dressing
1/2 Cup FRANK'S® REDHOT® Original Cayenne Pepper Sauce or FRANK'S® REDHOT® Buffalo Wing Sauce

1 canWhite Premium Chunk Chicken Breast in Water, drained


DIRECTIONS:
Preheat oven for 400*
mix all ingredient with electric mixer until smooth.
Place mixture into an 8x8 and bake for 25 minutes.
You can also sprinkle cheddar cheese on top and cook for another 5 minutes. or not either way it's awesome!!!
I eat it with Lays Wavy or Ruffles.



Chili Cheese dip

Ingredients:
1 Can hormel no beans
8oz Cream Cheese

Directions:
Mix and heat until hot.
Eat with Fritos

Bacon Wrapped Lil Smokies W/ Maple Brown Sugar Glaze
1 lb lil smokies
1 package bacon (cut into 1/3s)
1/3 cup brown sugar
1/4 cup real maple syrup
1 tablespoon dijon mustard

Dry of Lil Smokies and place on backing sheet. Put in the freezer for 30 minutes. Cut bacon into 1/3s and refrigerate for 30 minutes. Wrap Lil Smokies with bacon and place seam down on foil lined baking sheet.

Mix brown sugar, maple syrup, and dijon mustard together. Spoon evenly over smokies and bake for 30-40 minutes at 400. YUM!

You have to LOVE garlic for this one...I am going off memory here...just made it last night too actually :)

Garlic Bow Tie Pasta

Box of Tie Pasta, cooked.
4 bulbs of garlic, peeled and minced
oil
2 whole tomatoes, chopped
basil (to liking)
salt (to liking)
6-8 TBL tomato sauce

1. Coat bottom of skillet/pan with oil, enough for the entire bottom surface.

2. Put in the minced garlic, medium heat, for about 3 minutes. DO NOT BROWN.

3. Add tomatoes, basil, and salt, let simmer until it STARTS to turn brown.

4. Add 6-8 TBL tomato sauce and let simmer for about 10 minutes or so.

Once finished, put on top of pasta and enjoy...you don't need much sauce. I suggest putting a helping of pasta on your plate and using the sauce to your liking...don't mix it in with the full batch of pasta then serve...if that makes sense?

2 Globs of Peanut Butter
1 1/2 Globs of Jelly (I prefer strawberry)

DIRECTIONS:

Spread globs on each slice of bread, mash together and enjoy...

THIS IS EASY ANNNND DELICIOUS!

Crockpot Italian Chicken:
4 chicken breasts, 1 packet Italian dressing seasoning, 1 8 oz. cream cheese (softened), 2 cans cream of chicken soup; Cook on low for 4 hours. If sauce is too thick, add a little milk. Cook any past you would like, I like rigatoni with this. Stir in pasta, don't add too much too fast, you want enough sauce.

And dinner is served.

My husband will eat the whole pot if I let him, but I'm too busy fighting for my portion!

You have to be patient & be willing to ruin things(cause it can happen) be creative. Food network has great recipes& they go from easy to difficult.

I have seriously just learned to cook really about 3 years into my marriage, once my husband was actually HOME for me to cook for, thats when dinner became yummy!

Pasta Milano

Supplies
4 slices of bacon, diced before cooking
2 chicken breast, cubed
4 cloves of garlic minced or roasted
1/2 c. sun dried tomatoes
1 c. Fresh white mushrooms, sliced
1 c. chicken broth
1 c. heavy cream
1 fresh tomato, chopped
favorite dry pasta about half a box
shredded parmesan cheese

Directions
In a large skillet brown bacon, add chicken saute till brown in bacon grease and mushrooms till tender remove from pan. Add the garlic, sun dried tomatoes, chicken broth to pan boil till tomatoes are soft. Add cream, fresh tomato and chicken mixture. Cook pasta while chicken broth simmers. Mix ingredents all together sprinkle with cheese and let it melt a little.

If you use Pancetta in the Pasta Milano recipe instead of bacon it's so much better!

I do pork chops in the crockpot quite often. 4 1/2 inch think bone in porkchops placed on the bottom. In a seperate bowl mix one can of chicken broth, one can cream of chicken, one can of cream of mushroom, and a lipton onion soup mix packet. One combined pour over pork chops and cook on low 6-7 hours or high 4 hours. I serve with garlic mashed potatoes and a salad. So good.

sweet Cream Corn

Ingredients
1 1/4 cup corn kernels, thawed
1 cup half and half
1 teaspoon salt
2 tablespoons granulated sugar
1/4 teaspoon pepper
2 tablespoons butter
1 cup milk
2 tablespoons all-purpose flour




Directions
1. get a panand set at medium heat put the corn, half and half, salt, sugar, pepper and butter. In a bowl mix together the milk and flour, and stir into the corn mixture slowly. Cook and stir at medium heat until the mixture is thickened, and corn is cooked through. AND ENJOY=]
