I recently made these, and they were delicious! instead of cream I used milk, and for the sauce I used a few tablespoons of cream cheese ( I didn't have sour cream) and I also put a 1/4-1/2 cup of salsa in it. My whole family looooved them.
I don't bake mine. I think that's my "secret"...I noticed that everybody I know bake theirs. And I use "el pato" spicy tomato sauce.
I lightly cook both sides of white flour tortillas in oil, then I dip them in the sauce, then I add cooked shredded chicken AND "queso fresco", roll em up, add more sauce (if you want), shredded lettuce, a dollop of sour cream, and shredded Mexican cheese. Voila! My enchiladas are the shiz!
I boil the chicken and once its done and shredded add some salt pepper paprika . Dip tortillas in green sauce ( las palmas) or any green will do. Make sure to completely cover in sauce. Add chicken, and mixture or montery jack and pepper jack, I add diced green chilis , onions,and olives to mine. ( hubby just likes green chilis n cheese) roll them up and add more sauce if u want. Bake them and about five mins till they are done add a touch of cheese on top..... I love them and so does everyone I know. It's my go to dish!!
I don't like the canned sauces. We make the sauce from scratch using "California chiles" (I think that is what they are called. We also don't put meat in ours just diced onions and Mexican cheese. We use regular corn tortillas, fry them a bit in oil dip them in the mole and put the cheese and onion and roll them up. No baking required.
